Banana Oat Bites

In a large mixing bowl combine 3 large mashed bananas, 1/3 cup apple sauce, 2 cups quick oats, 1 tablespoon cinnamon. Spread mixture in a thin layer on a rimmed cookie sheet lined with parchment paper. Sprinkle on top any desired toppings: pumpkin seeds, coconut flakes, raisins (etc.). Bake in the oven on 350 for 15 minutes.

 

                            

                                          Roasted Brussell Sprouts

Toss Brussell Sprouts in olive oil, 2 tablespoons of balsamic vinegar and a pinch of salt. Roast in a 400 degree oven for 30 minutes.

                            

White Bean and Walnut Dip

In a food processor combine 1 can of white bean, 1/2 teaspoon chopped garlic, 1 cup walnuts, and olive oil. Add olive oil until you reach a desired consistenly. Transfer mixture to a bowl and add salt, pepper and chopped parsley to taste.
